At an elevation of 460 metres, this cool site produces Pinot Gris that is fragrant and finely structured. Aromas of pear, white peach and frangipani. The palate has a delicate acidity and fine length. This wine is the pinnacle of what Sevenhill is about. Named after the last Jesuit Priest winemaker, Brother John May, this wine is steeped in sentiment, passion and history. Brother John May is famous in the Clare region, having served as winemaker from 1972 to 2003 and still shares his advice to ensure Sevenhill will forever be at the forefront of Australian quality. Picked from a small block that was planted by Br May in his early days at Sevenhill, the low yield and ultra-high quality have created a masterpiece. Plenty of rain in Winter and Spring 2016 looked promising, however, a cool January slowed ripening right down and pushed out harvesting significantly. A burst of hot weather, late in February 2017 pushed things along for a March pick early one morning in the cool.
