SOFT - Le Conquerant Camembert, Selected by Will Studd | France
There are many things to love about this cheese. This cheese arrives in its own personal “cave” to ensure that the penicillium candidum mould on the outside flourishes, giving it the appearance of a huge marshmallow. Being a surface-ripened cheese, witnessing the breaking down of the pate from gooey on the outside to lactic and crumbly in the middle is a thing of beauty. As the cheese matures, the white mould develops brown spots and the chalky interior becomes less. Eat it early and its perfect with a fresh salad. Eat it late and it wonderful on crusty bread.
HARD - White Wensleydale, Maffra | Australia
This delicious White Wensleydale is a young cheese with a crumbly, moist texture and tangy flavour with a refreshing after taste. The acidity is balanced with a hint of honey flavour. Traditionally this cheese is enjoyed at Christmas time with fruit cake or plum pudding. Personally, any time of the year for White Wensleydale is good for me!
STINKY - Le Conquerant, Pont Leveq | France
The pungent aromas of this delicious washed rind cheese will assault you as you unwrap its wax paper coating – you may feel as though you are standing in a stable-yard! The rind itself has a classic deep golden colour and funky notes of hay and horses, as well as the rich buttery flavours and a touch of salt. The interior is soft and melt-in-the-mouth with a rich creaminess and hints of hazelnut. Leave out of the fridge for a couple of hours to best enjoy its creamy texture.
BLUE - Saint Agur, Bongrain | France
Although this cheese has a strong aroma, this is certainly not an indication of its intensity. We would say this is of medium intensity compared to some of the big punchy blues. On first taste the texture is what you will notice first; smooth and creamy. The blue has some spice to it yet it is not a salty as many other blues. You’ll certainly be coming back for more of this. And why not snack on it during the day… We do.
