Who are Stone & Crow?

Stone & Crow is run by an innovative and passionate cheesemaker, Jack Holman. With plenty of experience under his belt, he decided to do his own thing and started Stone & Crow in 2016. Under his own regime, he has been able to let his imagination run wild and he continues to amaze us with new indulgent creations!

What are the cheeses*?

Four delicious cheeses are specially selected for this cheesemaker pack, made of either cow's or goats milk.

STINKY: Night Walker
Milk:  
Night Walker is a washed rind cheese that Jack washes in brine every day until it is ready to wrap up. The texture is soft and gets more rich and gooey as it gets older. The flavour is mild and meaty, just like a washed rind should be.

SOFT: Galatic
Milk:  
Galactic is a little shining star cheese that truly reflects what is in the cow’s milk at that particular time and how the season has unfolded. This is because it is such a young cheese. Taste the terroir of the Yarra Valley!

SOFT: Amiel
Milk: 
Jack Holman at Stone & Crow knows how to make damn good cheese but he knows how to live life too. Amiel is the cheese he has named after his time spent in the South of France making cheese. Amiel is a stunning little lactic curd, halo-shaped cheese.

HARD: Special Reserve Annie Baxter
Milk:  
We all know that subtle flavour of buffalo mozzarella that always goes so beautifully with… pretty much anything. But that that same milk, with it’s high buttermilk content gives a rich cheese that reminds us of pecorino. This handcrafted cooked curd cheese is aged perfectly by Stone & Crow and is perfect as a table cheese or in place of parmesan. Wash this down with a young white wine and you’ll be convinced that their forethought was a great idea.
