Who is Nimbin Valley Dairy?
We all know Nimbin as a NSW hub for impeccable produce and Nimbin Valley Dairy certainly adds to this reputation! Nimbin Valley Dairy is the home of Kerry and Paul Wilson, together with 60 cows and 150 of the happiest free-ranging goats this side of Capricorn. Who doesn't love a happy cow? Inspired by the French and Italian plus a hefty 5 generations behind them, these cheesemakers make the kind of cheese that's stands a testament to the families long standing traditions.

SOFT: Tintenbar Triple Cream
Milk | Vegetarian
Crafted from cow milk, Tintenbar Triple Cream is a bloomy white mould cheese that's been made even more delightful with the addition of fresh cream. When young the paste has a chalky texture which matures into a very creamy and oozy cheese with a rich buttery yellow centre. This is how we like it!

STINKY: Nashua Washed Rind
Milk | Vegetarian
Nashua Washed Rind is a washed rind soft cheese crafted from cow milk, similar in shape and size to a camembert, but more bold and brave with it's tasty, yeasty outer! When young, the paste has a chalky texture which matures into a very creamy and soft cheese with a buttery yellow centre.

BLUE: Blue Cow
Milk | Vegetarian
Blue Cow is a surface ripened cow milk cheese with characteristic blue veins throughout. The rind is soft and the intensity of colour and flavour increases with age. For a softer texture, stronger flavour with fruity notes, we recommend you wait as long as you can to resist this one. As Kerry says, the second mouse gets the cheese!

HARD: Monte Nardi

Monte Nardi is a hard cow milk cheese that pays tribute to the early Italian settlers of the Northern Rivers region; it is Australia’s first truly regional cheese. Italian settlers began arriving at the beginning of last century from the Venuto region and surrounds of northern Italy, bringing their local farmhouse cheese making skills with them. Over a period of time reaching out and learning from the generations before them, Nimbin Valley crafted the Monte Nardi to perfection!
